I was listening to the Farm to School podcasts and stories recorded on Prevention Speaks. Shirley had contributed a post about keeping fruits and veggies out of the trash (Keeping the Fresh Fruit Out of the Trash, September 2011). In the podcast, school staff gave the option of fruits or veggies and didn't automatically put an apple on a plate. Giving kids the option led to students making a healthy choice without being prompted to do so.
