Perfect Hard Boiled Eggs!


You asked for it, and here it is!
The SECRET to boiling the perfect egg, thanks to Julia Child...

  • Use Grade A large eggs (the timing is based on this size egg)
  • Bring enough water cover eggs to a boil
  • Lower the eggs into the boiling water
  • Bring the water back to a boil
  • Lower to a simmer (not a hard boil)
  • Cook for:
    11 minutes (room temp eggs)
    or 12 minutes (refrigerator temp eggs)
  • After cooking, dump most of the water, then run under cold running water for 3-4 minutes

VOILA!!! Your eggs should be perfectly cooked, no green around the yoke!

Significant points:
  1. cooking time is on SIMMER
  2. cold water stops the cooking
  3. the yoke will have a slightly creamy center, which Julia says is PERFECT!


If your eggs are not large, try adding 1 minute cooking time for X-Large, or subtracting 1 minute for medium, which isn't easy to find any more.
